Ingredients
  

  • 1 lb ground beef
  • 1 small onion finely chopped
  • 1 green bell pepper diced
  • 2 cloves garlic minced
  • 1 cup cheddar cheese shredded
  • 1/2 cup BBQ sauce
  • 1 tsp smoked paprika
  • Salt and pepper to taste
  • 1 package refrigerated biscuit dough
  • 1 egg beaten for egg wash

Instructions
 

  • Begin by heating your oven to 375°F (190°C) and arranging a parchment-lined baking sheet.
  • Cook the filling: Start the filling by browning the ground beef in a skillet over medium heat. Drain excess fat.
  • Next, incorporate onions, bell pepper, and garlic into the mix. Cook until vegetables are tender.
  • Stir in BBQ sauce, smoked paprika, salt, and pepper. Continue cooking for an additional 5 minutes until the ingredients are thoroughly mixed. Let cool slightly.
  • Prepare the dough: Roll out biscuit dough on a lightly floured surface. Cut into 6-inch circles.
  • Assemble the pockets: Spoon the meat mixture onto half of each dough circle. Top with cheddar cheese. Carefully fold the dough over to form a semi-circle. Press the edges together using a fork to seal them securely.
  • Place the pockets on the prepared baking sheet. Brush with egg wash.
  • Place in the oven and bake for 15-20 minutes, or until the surface turns a rich golden color.
