Ingredients
  

For the Cakes:

  • 2 ½ cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • 1 tsp ground cinnamon
  • ½ tsp ground nutmeg
  • ½ tsp ground ginger
  • ½ tsp salt
  • 1 cup brown sugar packed
  • ½ cup unsalted butter softened
  • ½ cup apple cider
  • 1 large egg
  • 1 tsp vanilla extract
  • ½ cup applesauce

For the Filling:

  • ½ cup unsalted butter softened
  • 1 ½ cups powdered sugar
  • 2 tbsp apple cider
  • ½ tsp cinnamon

Instructions
 

  • Preheat oven to 350°F.
  • Line baking sheets with parchment paper.
  • Whisk flour, baking powder, baking soda, spices, and salt.
  • Cream butter and brown sugar until fluffy.
  • Beat in egg, vanilla, cider, and applesauce.
  • Gradually add dry ingredients to wet mixture.
  • Mix until just combined.
  • Drop batter by tablespoons onto prepared sheets.
  • Bake for 10 minutes or until set.
  • Cool completely on a wire rack.
  • Beat filling ingredients until creamy.
  • Spread filling on flat side of one cake.
  • Top with another cake to make a sandwich.
  • Repeat for remaining cakes.

Notes

  1. Use fresh apple cider for richer flavor.
  2. Do not overmix the batter.
  3. Chill filling if too soft.
  4. Let cakes cool before filling.
  5. Store pies in airtight container.
