Instructions
 

  • Preheat oven to 350°F (175°C).
  • Grease a 9x13 baking dish.
  • Combine flour, baking soda, cinnamon, and salt.
  • In another bowl, whisk eggs and sugar.
  • Add oil and vanilla to egg mixture.
  • Stir in apples and pecans.
  • Fold in dry ingredients gently.
  • Pour batter into prepared baking dish.
  • Bake for 40-45 minutes.
  • Insert toothpick; it should come out clean.
  • While cake bakes, prepare caramel glaze.
  • Melt butter in saucepan on medium heat.
  • Stir in brown sugar and milk.
  • Boil for 2 minutes, stirring constantly.
  • Remove from heat, add vanilla.
  • Pour glaze over hot cake.
  • Let cake cool on rack.
  • Slice and serve warm or chilled.
