Preheat oven to 350°F (175°C).
Grease a 9x13 baking dish.
Combine flour, baking soda, cinnamon, and salt.
In another bowl, whisk eggs and sugar.
Add oil and vanilla to egg mixture.
Stir in apples and pecans.
Fold in dry ingredients gently.
Pour batter into prepared baking dish.
Bake for 40-45 minutes.
Insert toothpick; it should come out clean.
While cake bakes, prepare caramel glaze.
Melt butter in saucepan on medium heat.
Stir in brown sugar and milk.
Boil for 2 minutes, stirring constantly.
Remove from heat, add vanilla.
Pour glaze over hot cake.
Let cake cool on rack.
Slice and serve warm or chilled.
