- 12 oz pasta rigatoni or penne
- 1 lb Italian sausage
- 2 cups diced butternut squash
- 1 cup heavy cream
- 1 small onion diced
- 2 garlic cloves minced
- 2 tbsp olive oil
- 1 cup chicken broth
- 1 tsp dried thyme
- ½ tsp nutmeg
- Salt and pepper to taste
- Parmesan cheese grated
- Fresh parsley for garnish
- Cook pasta until tender. 
- Drain and set aside. 
- Heat oil in skillet. 
- Add sausage and cook fully. 
- Remove sausage and set aside. 
- Add onion and sauté gently. 
- Add garlic and stir well. 
- Add squash cubes and broth. 
- Cook until squash turns soft. 
- Mash squash lightly for creaminess. 
- Add sausage back to skillet. 
- Pour in cream and thyme. 
- Add nutmeg, salt, pepper. 
- Stir until sauce thickens. 
- Add pasta and combine well. 
- Garnish with parsley and cheese. 
- Serve hot and enjoy.
