Ingredients
  

  • 2 cups all-purpose flour
  • 1/2 cup cold butter cubed
  • 1/4 teaspoon salt
  • 4-6 tablespoons ice water
  • 1 pound ground beef
  • 1 onion finely chopped
  • 2 cloves garlic minced
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • 1/2 cup tomato sauce
  • 1/2 cup green olives chopped
  • 1/2 cup raisins
  • Salt and pepper to taste
  • 1 egg beaten for egg wash

Instructions
 

  • Prepare the Dough: In a large bowl, mix flour and salt. Incorporate the butter into the mixture until it takes on the appearance of coarse crumbs. Slowly incorporate ice water, mixing until the mixture coalesces into a dough. Wrap and chill for 30 minutes.
  • Cook the Filling: In a skillet over medium heat, cook the ground beef, onion, and garlic until the meat is browned. Drain excess fat.
  • Season: Add cumin, paprika, tomato sauce, olives, and raisins. Cook for 5 more minutes, allowing the flavors to meld. Season with salt and pepper.
  • Assemble Empanadas: Roll out the dough and cut into circles. Place a spoonful of filling on each circle, fold over, and press edges with a fork to seal.
  • Bake: Place empanadas on a baking sheet, brush with egg wash, and bake at 375°F for 25-30 minutes, or until golden brown.
