  • 2 cups fresh oysters with their liquid
  • 2 cups whole milk
  • 1 cup heavy cream
  • 4 tablespoons butter
  • 1 small onion finely chopped
  • 1 celery stalk finely chopped
  • 2 cloves garlic minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon paprika
  • 1 tablespoon fresh parsley chopped

Instructions
 

Prepare the Base

  • Melt butter in a saucepan over medium heat. Add chopped onion and celery. Cook for about five minutes until soft. Stir often so nothing burns. Add garlic and cook for one more minute until fragrant.

Add the Milk and Cream

  • Pour in the milk and heavy cream slowly. Stir gently while adding. Reduce the heat to low. Let the mixture warm up but do not let it boil. This step builds a smooth base.

Season the Mixture

  • Add salt, black pepper, and paprika. Stir well to mix the flavors evenly. Taste the broth at this stage. You can adjust salt or spice according to your preference.

Add the Oysters

  • Gently add the oysters along with their liquid. Stir carefully. Cook for about five to seven minutes. The oysters will curl slightly when they are done.

Finish with Butter and Herbs
