Ingredients
  

  • 3 cups cooked jasmine rice cold, day-old
  • 3 tablespoons vegetable oil
  • 1 tablespoon sesame oil
  • 2 tablespoons soy sauce
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 green onions chopped
  • 1 teaspoon garlic minced
  • 1 teaspoon ginger grated

Instructions
 

Prepare the Rice

  • Take cold, cooked rice from the fridge. Break any clumps gently using your hands or a fork. The rice should be loose, not sticky. This step is very important for even crisping later.

Heat the Pan

  • Place a non-stick pan on medium heat. Add vegetable oil and sesame oil. Let the oil warm up slowly. Do not rush this step. The oil should be hot but not smoking.

Add Garlic and Ginger

  • Add minced garlic and grated ginger to the hot oil. Stir gently for about one minute. This brings out a rich aroma and adds deep flavor to the crispy rice.

Add the Rice

  • Now add the rice into the pan. Spread it evenly using a spatula. Press it down lightly. This helps create a flat layer, which is key for getting that golden crust.

Let It Cook Undisturbed

  • Leave the rice alone for 5–7 minutes. Do not stir. This allows the bottom layer to become crispy and golden. You may hear a slight crackling sound.

Flip the Rice

  • Carefully flip sections of the rice using a spatula. Try to keep large chunks together. Cook the other side for another 5 minutes until crispy.

Add Seasoning

  • Pour soy sauce over the rice. Add salt and black pepper. Mix gently to coat the rice evenly. Be careful not to break all the crispy pieces.

Add Green Onions

  • Sprinkle chopped green onions on top. Mix lightly. This adds freshness and a mild crunch that balances the crispy texture.

Serve Hot

  • Transfer the crispy rice to a plate. Add your favorite toppings like fried egg or chili oil. Serve immediately for the best taste and texture.
