Ingredients
  

For the Ribs:

  • 2 racks pork ribs about 2 pounds each

For the Dry Rub:

  • 2 tbsp brown sugar
  • 1 tbsp paprika
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp black pepper
  • 1 tsp salt
  • ½ tsp cayenne pepper optional
  • 1 tsp mustard powder

Optional:

  • BBQ sauce for brushing

Instructions
 

Prepare the Ribs

  • Wash the ribs under cold water. Pat them dry with paper towels. Remove the thin membrane from the back of the ribs. This step helps make them tender and easy to eat.

Make the Dry Rub

  • Take a small bowl. Add brown sugar, paprika, garlic powder, and other spices. Mix everything well until fully combined. The mix should smell rich and slightly smoky.

Apply the Rub

  • Place ribs on a tray. Rub the spice mix all over both sides. Press gently so it sticks well. Cover the ribs and let them rest for at least one hour.

Preheat the Oven

  • Set your oven to 150°C (300°F). Low heat is key here. This will slowly cook the ribs and make them soft and juicy.

Wrap the Ribs

  • Place ribs on foil. Wrap them tightly. This locks in moisture and flavor. It also prevents the ribs from drying out during cooking.

Bake the Ribs

  • Put wrapped ribs in the oven. Bake for about 2 to 2.5 hours. The meat should become very tender and start pulling away from the bones.

Finish on Grill or Broil

  • Remove the foil. Brush with BBQ sauce if you like. Grill or broil for 5–10 minutes. This gives a crispy and caramelized top layer.

Rest and Serve

  • Let the ribs rest for 5 minutes. Cut between the bones. Serve warm and enjoy every bite.
