- 2 ripe peaches diced
- 3 tbsp bourbon
- 2 tbsp soy sauce
- 2 tbsp honey
- 1 tbsp Dijon mustard
- 1 tbsp olive oil
- 2 cloves garlic minced
- 1 tsp salt
- ½ tsp black pepper
- 1 tsp fresh thyme leaves
- 1 tbsp lemon juice
Preheat oven to 400°F.
Line baking sheet with parchment paper.
Place salmon fillets on sheet.
Sprinkle salt and pepper evenly.
In saucepan, add bourbon, peaches, honey.
Stir and cook until peaches soften.
Add garlic, mustard, soy sauce, thyme.
Simmer glaze until slightly thickened.
