Ingredients
  

  • 12 oz bow tie pasta
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 1/2 cup red bell pepper diced
  • 1/2 cup yellow bell pepper diced
  • 1/4 cup red onion finely chopped
  • 1/2 cup black olives sliced
  • 1/4 cup feta cheese crumbled
  • 1/4 cup fresh basil chopped

For the Dressing:

  • 1/4 cup olive oil
  • 2 tbsp red wine vinegar
  • 1 tbsp lemon juice
  • 1 garlic clove minced
  • 1 tsp Dijon mustard
  • Salt and pepper to taste

Instructions
 

  • Cook the Pasta: Begin by cooking the bow tie pasta according to the package instructions. After cooking, drain the pasta and rinse it under cold water to cool it down.
  • Prepare the Vegetables: While the pasta is boiling, start chopping the vegetables. Cut the cherry tomatoes in half, dice the cucumber and bell peppers, finely chop the red onion, and slice the black olives.
  • Mix the Ingredients: In a large mixing bowl, combine the cooled pasta, cherry tomatoes, cucumber, red and yellow bell peppers, red onion, black olives, and feta cheese.
  • Make the Dressing: In a small bowl, whisk together olive oil, red wine vinegar, lemon juice, minced garlic, Dijon mustard, salt, and pepper until well combined.
  • Combine Everything: Pour the dressing over the pasta salad and toss until all ingredients are well coated. Sprinkle with fresh basil.
