- 1 cup butter unsalted
- 2 ¼ cups plain flour all-purpose
- 1 teaspoon baking soda
- ½ teaspoon salt
- 1 tablespoon instant coffee
- 1 cup brown sugar
- ½ cup white sugar
- 2 eggs
- 2 teaspoons vanilla
- 1 ½ cups toffee bits
- ½ cup chocolate chips optional
Melt the butter in a small pot.
Keep cooking it until golden and smells nutty.
Let it cool for 10 minutes.
In a bowl, mix flour, salt, and baking soda.
Add instant coffee to that bowl.
In another bowl, mix brown butter and sugars.
Add eggs and vanilla. Mix well.
Mix dry and wet bowls together.
Scoop small balls onto the tray with parchment.
Bake at 350°F (175°C) for 10–12 minutes.
Let cookies cool for 5 minutes.
Move to wire rack. Let them cool fully.
