Ingredients

  • ½ teaspoon ground cinnamon
  • ½ cup unsalted butter softened
  • ½ cup ricotta cheese
  • ¾ cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • ½ teaspoon almond extract
  • ½ cup mini chocolate chips
  • ¼ cup chopped pistachios optional
  • Powdered sugar for dusting

Instructions
 

  • Preheat oven to 350°F (175°C).
  • Line baking sheet with parchment paper.
  • In a bowl, whisk flour, baking powder, salt, and cinnamon.
  • In another bowl, beat butter and sugar until fluffy.
  • Add ricotta, egg, and extracts. Mix until smooth.
  • Slowly add dry ingredients to wet ingredients.
  • Stir in chocolate chips and pistachios.
  • Scoop dough onto baking sheet.
  • Bake for 10–12 minutes until edges turn golden.
  • Cool on rack. Dust with powdered sugar.
