Ingredients
  

For the Brioche Dough

  • 2 large eggs
  • 1/3 cup warm whole milk
  • 5 tablespoons unsalted butter softened
  • 1 teaspoon vanilla extract

For the Apple Filling

  • 3 medium apples
  • 2 tablespoons brown sugar
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon nutmeg
  • 1 tablespoon lemon juice
  • 1 tablespoon all-purpose flour

For the Caramel Sauce

  • 1/2 cup granulated sugar
  • 3 tablespoons unsalted butter
  • 1/4 cup heavy cream
  • 1/2 teaspoon vanilla extract
  • Pinch of salt

For the Topping

  • 1 egg
  • 1 tablespoon water
  • 1 tablespoon coarse sugar
  • Powdered sugar optional

Prepare the Brioche Dough

  • Add flour, sugar, yeast, and salt to a large bowl. Mix well. Add warm milk, eggs, and vanilla. Stir until a soft dough forms. Add softened butter and knead until smooth.

Knead the Dough Until Smooth

  • Transfer the dough onto a lightly floured surface. Knead for about six minutes. The dough should feel soft and elastic. Avoid adding too much flour, because brioche should stay tender.

Let the Dough Rise

  • Place the dough inside a lightly greased bowl. Cover it with a clean kitchen towel. Let it rise for about one hour. It should become noticeably puffy and almost double in size.

Prepare the Apples

  • Peel the apples if desired. Remove their cores and slice them thinly. Place the slices inside a bowl. Add brown sugar, cinnamon, nutmeg, lemon juice, and flour.

Mix the Apple Filling

Make the Caramel Sauce
