Ingredients
  

  • 8 oz cream cheese soft
  • 1/4 cup powdered sugar
  • 1 cup grated carrots
  • 1/2 cup crushed graham crackers
  • 1/2 cup chopped nuts
  • 1 tsp vanilla
  • 1/2 tsp cinnamon
  • 12 oz white chocolate chips
  • 2 tbsp coconut oil

Instructions
 

  • Mix cream cheese until smooth.
  • Add powdered sugar and vanilla.
  • Grate carrots very fine.
  • Crush graham crackers into crumbs.
  • Mix in carrots, crackers, nuts, cinnamon.
  • Chill mixture for 30 minutes.
  • Roll into 20 small balls.
  • Put on parchment paper.
  • Chill balls for 1 hour.
  • Melt chocolate with coconut oil.
  • Dip each ball in chocolate.
  • Chill for 30 more minutes.

Notes

  1. Use soft cream cheese - It mixes better and makes smooth truffles.
  2. Grate carrots small - Tiny pieces work best in this carrot cake truffles recipe.
  3. Keep everything cold - Cold mixture is easier to roll into balls.
  4. Work fast with chocolate - Don't let it get too hot or it won't work right.
  5. Make them the same size - Use a small spoon to scoop equal amounts.
