cream cheese

grated carrots

crushed graham crackers

Instructions
Mix cream cheese until smooth.
Add powdered sugar and vanilla.
Grate carrots very fine.
Crush graham crackers into crumbs.
Mix in carrots, crackers, nuts, cinnamon.
Chill mixture for 30 minutes.
Roll into 20 small balls.
Put on parchment paper.
Chill balls for 1 hour.
Melt chocolate with coconut oil.
Dip each ball in chocolate.
Chill for 30 more minutes.

Use soft cream cheese
- It mixes better and makes smooth truffles.
Grate carrots small
