Ingredients
  

  • 1 lb ground beef
  • 1 tbsp olive oil
  • 1 small onion diced
  • 2 cloves garlic minced
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1 tsp paprika
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 can 10 oz enchilada sauce
  • 1 cup sour cream
  • 2 cups shredded cheddar cheese
  • 8 large flour tortillas
  • 2 tbsp fresh cilantro chopped

Instructions
 

  • Preheat oven to 375°F.
  • Heat oil in skillet over medium heat.
  • Add onion and garlic, cook until softened.
  • Add ground beef, cook until browned.
  • Stir in chili powder, cumin, paprika, salt, and pepper.
  • Pour half enchilada sauce into beef mixture.
  • Remove from heat and let mixture cool slightly.
  • Place some beef mixture on each tortilla.
  • Add shredded cheese, then roll tortillas tightly.
  • Place rolls seam side down in baking dish.
  • Pour remaining sauce over the top.
  • Spread sour cream evenly on top layer.
  • Sprinkle with remaining cheese.
  • Cover dish with foil.
  • Bake for 20 minutes.
  • Remove foil and bake another 10 minutes.
  • Garnish with fresh cilantro before serving.
