Ingredients
  

  • 4 boneless skinless chicken breasts
  • 1 cup all-purpose flour
  • 2 eggs beaten
  • 1 cup Italian breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup olive oil
  • 1/2 cup white wine
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 4 slices of prosciutto
  • 1 cup sliced mushrooms
  • Salt and pepper to taste
  • Fresh parsley chopped (for garnish)

Instructions
 

  • Preheat your oven to 375°F (190°C).
  • Flatten the Chicken Modiga breasts to an even thickness using a meat hammer or rolling pin.
  • Season both sides of each Chicken Modiga breast with salt and pepper.
  • Dredge each Chicken Modiga breast in flour, dip into beaten eggs, and then coat with a mixture of breadcrumbs and grated Parmesan.
  • Heat olive oil in a skillet over medium heat and fry each Chicken Modiga breast until golden brown on both sides.
  • Remove the Chicken Modiga and set aside. In the same skillet, add prosciutto and mushrooms and sauté until the mushrooms are tender.
  • Deglaze the pan with white wine, stirring to lift any browned bits off the bottom of the skillet.
  • Add chicken broth and bring to a simmer. Reduce the sauce by half, then stir in the heavy cream and simmer until the sauce thickens.
  • Return the Chicken Modiga to the skillet, spooning the sauce over the top. Wrap it in foil and let it cook in the oven for 20 minutes.
  • Garnish with chopped parsley before serving.
