- 4 boneless skinless chicken breasts
- 1 cup all-purpose flour
- 2 eggs beaten
- 1 cup Italian breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1/4 cup olive oil
- 1/2 cup white wine
- 1 cup chicken broth
- 1 cup heavy cream
- 4 slices of prosciutto
- 1 cup sliced mushrooms
- Salt and pepper to taste
- Fresh parsley chopped (for garnish)
Preheat your oven to 375°F (190°C).
Flatten the Chicken Modiga breasts to an even thickness using a meat hammer or rolling pin.
Season both sides of each Chicken Modiga breast with salt and pepper.
Dredge each Chicken Modiga breast in flour, dip into beaten eggs, and then coat with a mixture of breadcrumbs and grated Parmesan.
Heat olive oil in a skillet over medium heat and fry each Chicken Modiga breast until golden brown on both sides.
