- 3 tbsp plain yogurt
- 1 tbsp olive oil
- 1 tsp ground cumin
- 1 tsp ground paprika
- ½ tsp ground turmeric
- ½ tsp garlic powder
- ½ tsp onion powder
- ½ tsp cinnamon
- Salt and pepper to taste
- Juice of 1 lemon
For the Rice Base:
- 1 cup basmati rice
- 1 ½ cups water
- 1 tbsp olive oil
- ½ tsp turmeric
- Salt to taste
For the Bowl Toppings:
- 1 cup chopped lettuce
- ½ cup diced cucumbers
- ½ cup cherry tomatoes halved
- ¼ cup pickled red onions
- 2 tbsp hummus
- 2 tbsp garlic sauce or tahini
- Fresh parsley for garnish
Mix all chicken marinade ingredients in a bowl.
Add chicken and coat well. Refrigerate 1 hour.
Cook rice with turmeric, olive oil, and salt.
