For the chicken:
- 500 g boneless chicken thighs sliced
- 2 tbsp soy sauce
- 1 tbsp cornstarch
- 1 tbsp oil
For the sauce:
- 1/3 cup soy sauce
- 1/4 cup honey
- 2 tbsp rice vinegar
- 2 tbsp brown sugar
- 2 garlic cloves minced
- 1 tsp ginger grated
- 1 tsp sesame oil
- 1 tbsp cornstarch + 2 tbsp water slurry
For the noodles:
- 200 g egg noodles or soba noodles
- 1 cup bell peppers sliced
- 1 cup carrots julienned
- 1/2 cup green onions chopped
- 1 tbsp sesame seeds optional
Cook noodles as per packet directions. Drain and set aside.
In a bowl, mix chicken, soy sauce, and cornstarch.
Heat oil in a skillet on medium-high heat.
Sear chicken until golden and cooked through. Remove.
In a bowl, whisk all sauce ingredients except the slurry.
Add sauce to the skillet and simmer gently.
Stir in slurry to thicken sauce to desired texture.
Return chicken to the pan with sliced vegetables.
Stir-fry for 2-3 minutes until vegetables are tender.
Add noodles and toss everything to coat evenly.
Sprinkle sesame seeds and green onions on top.
