Slice pork into long thick strips.
Mix sauces, sugar, honey, vinegar, and spices.
Add garlic, sesame oil, and food coloring.
Whisk until smooth and fully combined.
Place pork strips into the marinade.
Cover bowl and refrigerate overnight.
Preheat oven to 375°F (190°C).
Line tray with foil and place pork.
Roast for 25 minutes, turning once.
Brush with leftover marinade.
Increase oven to 425°F (220°C).
Roast 15 more minutes until caramelized.
Check temperature, pork should be 145°F.
Rest pork for 10 minutes.
Slice thin and serve hot.
