Instructions
 

  • Preheat Oven and Prepare Pan: Preheat your oven to 325°F (165°C). Line a 9-inch round baking pan with parchment paper and lightly grease it.
  • Mix Dry Ingredients: In a bowl, whisk together flour, baking powder, and salt.
  • Cream Butter and Sugar: In a separate large bowl, beat the softened butter and brown sugar with an electric mixer until fluffy.
  • Add Eggs: Beat in eggs one at a time, followed by the vanilla extract.
  • Incorporate Dry Ingredients: Gradually add the dry ingredients to the wet mixture, alternating with orange juice.
  • Fold in Fruits and Nuts: Gently fold in raisins, dates, cranberries, apricots, walnuts, and citrus zest.
  • Bake: Pour the batter into the prepared pan and smooth the top. Bake for 50 to 60 minutes or until a toothpick inserted into the center comes out clean.
  • Cool: Let the cake cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
