Ingredients
  

  • 8 oz pasta penne or fettuccine
  • 1 cup fresh or dried cranberries
  • 1 tbsp butter
  • 4 oz cream cheese softened
  • ½ cup heavy cream
  • 1 tbsp honey or maple syrup
  • ¼ tsp salt
  • ¼ tsp black pepper
  • 1 tsp lemon zest
  • 2 tbsp chopped parsley for garnish
  • 2 tbsp grated Parmesan optional

Instructions
 

  • Boil water in a large pot.
  • Add pasta and cook until al dente.
  • Drain and set pasta aside.
  • In a saucepan, melt butter on medium heat.
  • Add cranberries and cook until they soften.
  • Stir in honey and cook for one minute.
  • Lower heat and add cream cheese.
  • Stir until smooth and creamy.
  • Pour in heavy cream slowly.
  • Add salt, pepper, and lemon zest.
  • Mix until sauce thickens slightly.
  • Toss in cooked pasta and coat well.
  • Garnish with parsley and Parmesan.
