  • 1 cup jasmine rice
  • 1 cup coconut milk
  • 1 cup water
  • 1 cup pineapple chunks fresh or canned
  • 1 tablespoon butter
  • 1 teaspoon salt
  • 1 tablespoon sugar optional
  • 1 tablespoon shredded coconut for garnish
  • Fresh cilantro optional, for garnish

Instructions
 

  • Rinse rice under cold water.
  • Drain rice completely.
  • Heat butter in saucepan over medium heat.
  • Add rice and stir for two minutes.
  • Pour in coconut milk and water.
  • Add salt and sugar.
  • Stir gently until combined.
  • Cover saucepan with lid.
  • Reduce heat to low.
  • Cook for 15 minutes.
  • Remove from heat.
  • Let rice sit for five minutes.
  • Fluff rice with fork.
  • Stir in pineapple chunks.
  • Garnish with shredded coconut and cilantro.
  • Serve warm immediately.
