- 4 salmon fillets skin-on or skinless
- Salt and black pepper to taste
- 1 tbsp olive oil
- 2 tbsp butter
- 4 garlic cloves minced
- 1 cup heavy cream
- ½ cup chicken broth
- ⅓ cup grated parmesan cheese
- 1 tsp Italian seasoning
- ½ tsp crushed red pepper flakes
- ½ cup sun-dried tomatoes sliced
- 1½ cups baby spinach
- Fresh parsley for garnish
Pat salmon dry. Season with salt and pepper.
Heat oil in skillet over medium heat.
Sear salmon 4–5 minutes per side. Remove and set aside.
In same pan, melt butter and sauté garlic.
Add cream, broth, and parmesan. Stir until smooth.
SMix in seasoning, chili flakes, and tomatoes.
Let sauce simmer 3–4 minutes until slightly thick.
Add spinach and cook until wilted.
Return salmon to pan. Simmer 5 minutes.
Garnish with parsley. Serve hot and enjoy!
