Ingredients
  

  • 2 tablespoons olive oil
  • 1 large onion chopped
  • 3 garlic cloves minced
  • 2 carrots peeled and diced
  • 2 celery stalks diced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • Salt and pepper to taste
  • 6 cups chicken broth
  • 1 cup uncooked white rice
  • 2 cups cooked shredded chicken
  • 1 bay leaf
  • Optional: chopped parsley for garnish

Instructions
 

  • Heat the olive oil in a large pot over medium heat. Add the onion and garlic and sauté until the onions are translucent.
  • Add the carrots, celery, thyme, and parsley. Season with salt and pepper. Cook, stirring occasionally, until the vegetables are slightly tender.
  • Pour in the chicken broth and bring the mixture to a boil.
  • Stir in the rice and bay leaf. Reduce heat to a simmer and cook until the rice is tender, about 18 minutes.
  • Add the shredded chicken to the pot and continue to simmer until the chicken is heated through.
  • Remove the bay leaf and adjust seasoning with salt and pepper if needed.
  • Serve hot, garnished with chopped parsley if desired.

Notes

  1. Use homemade chicken broth for the best flavor.
  2. Cook the rice separately if you prefer it not to absorb too much broth.
  3. Add the chicken at the end to keep it tender and juicy.
  4. Store leftovers in an airtight container to maintain freshness.
  5. Reheat gently to preserve the texture of the rice and chicken.
