Denver Omelette Egg Bites Recipe is one of my favorite easy breakfasts. These soft, fluffy bites are full of flavor. They have eggs, cheese, ham, peppers, and onion in every bite.

Ingredients
  

  • 8 large eggs
  • 1/4 cup milk
  • 1 cup diced cooked ham
  • 1/2 cup chopped green bell pepper
  • 1/4 cup chopped red bell pepper
  • 1/3 cup chopped onion
  • 3/4 cup shredded cheddar cheese
  • 1 tablespoon butter
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • Cooking spray for muffin tray
  • 1 tablespoon chopped parsley for topping

Instructions
 

Prepare the Oven and Tray

  • Preheat your oven to 350°F. Grease your muffin tray well with cooking spray. This helps the egg bites come out easily. Set the tray aside while preparing the filling.

Cook the Vegetables

  • Heat butter in a frying pan over medium heat. Add onion and peppers. Cook for three to four minutes. Stir often until soft, sweet, and lightly golden.

Add the Ham

  • Add diced ham to the cooked vegetables. Stir for one minute. This warms the ham and blends the flavors nicely. Your kitchen will smell warm and delicious.

Whisk the Eggs

  • Crack eggs into a large bowl. Add milk, salt, pepper, and garlic powder. Whisk very well until smooth, light, and slightly frothy for fluffy bites.

Mix in Cheese and Filling

  • Add cooked ham mixture into the egg bowl. Stir in shredded cheddar cheese. Mix gently so everything spreads evenly. Each bite should have plenty of tasty filling.

Fill the Muffin Cups

  • Pour the egg mixture into prepared muffin cups. Fill each cup about three-fourths full. This gives space for rising while baking in the hot oven.

Bake Until Set

  • Place the tray in the oven. Bake for about twenty minutes. The tops should look puffed and set. A toothpick inserted should come out clean.

Cool and Serve

  • Let the egg bites cool for five minutes. Carefully remove them from the tray. Sprinkle parsley on top. Serve warm and enjoy your homemade breakfast bites.
