Equipment

  • Measuring cups and spoons
  • Two 9-inch round cake pans
  • Mixer (stand or handheld)
  • Mixing bowls
  • Sifter
  • Spatula
  • Wire rack for cooling
  • Cake server

Ingredients

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup unsalted butter softened
  • 1 1/2 cups sugar
  • 4 eggs
  • 1 teaspoon vanilla extract
  • 1 cup milk
  • 2 cups fresh strawberries diced
  • 1/2 cup strawberry jam for filling
  • Whipped cream for topping
  • Sliced strawberries for garnish

Instructions

  • Preheat your oven to 350°F (175°C). Grease and flour the cake pans.
  • Combine dry components: Combine the flour, baking powder, and salt in a sieve and sift them together to ensure they are well mixed. Set aside.
  • Whip the butter and sugar: In a sizable mixing bowl, whisk the butter and sugar together until they become light and airy.
  • Add eggs and vanilla: Beat in eggs, one at a time, then stir in the vanilla.
  • Combine mixtures: Alternately add the dry ingredients and milk to the butter mixture, starting and ending with the flour mixture.
  • Fold in strawberries: Gently fold in diced strawberries.
  • Baking the cake: Transfer the cake mixture to your greased pans and bake at the preheated temperature for 25-30 minutes, or until a toothpick inserted into the middle of the cake comes out without any wet batter.
  • Cool: Allow cakes to cool in the pans for 10 minutes, then turn out onto a wire rack to cool completely.
  • Assemble the cake: Spread strawberry jam between the layers, then cover the top and sides with whipped cream. Garnish with sliced strawberries.

Notes

  • It's crucial for all ingredients to be brought to room temperature before mixing to help produce a consistent, smooth batter.
  • Do not over-mix the batter after adding the flour to keep the cake light and airy.
  • Opt for fresh and fully ripe strawberries to enhance the cake with the best possible flavor and a pleasing texture.
  • If the cake tops brown too quickly, cover them loosely with foil during the last 10 minutes of baking.
  • Let the cakes cool completely before frosting to prevent the whipped cream from melting.
