Ingredients
  

  • 100 grams of dried fish maw
  • 1.5 liters of chicken or pork broth
  • 200 grams of chicken breast thinly sliced
  • 2 slices of ginger
  • 3 scallions finely chopped
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • Salt to taste
  • A handful of coriander for garnishing

Instructions
 

  • Preparation: Soak the dried fish maw in warm water for at least 3 hours, or until fully expanded and soft.
  • Broth Prep: In a large pot, bring the chicken or pork broth to a boil. Add ginger slices and lower the heat to simmer.
  • Cooking the Fish Maw: Drain the fish maw and add it to the simmering broth. Let it cook for about 30 minutes, or until tender.
  • Adding Chicken: Add the sliced chicken to the pot and cook until the chicken is tender, about 10 minutes.
  • Seasoning: Stir in the soy sauce and sesame oil. Season with salt to taste.
  • Final Touches: Add the chopped scallions just before turning off the heat. Stir well.
