Ingredients
  

For the Peach Filling

  • 6 cups fresh peaches peeled and sliced
  • ¾ cup granulated sugar
  • 2 tablespoons brown sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • 2 tablespoons cornstarch
  • 1 tablespoon unsalted butter

For the Cobbler Topping

Prepare the Peaches

  • Wash the peaches well. Peel the skin if you prefer a smoother filling. Slice them into even pieces. Place them in a large bowl. Fresh peaches make the best flavor and texture for this homemade dessert.

Make the Peach Filling

  • Add sugar, brown sugar, lemon juice, vanilla, cinnamon, nutmeg, and cornstarch to the peaches. Mix gently until every slice is coated. Let the mixture rest for about ten minutes so the peaches release their natural juices.

Prepare the Baking Dish

  • Heat your oven to 350°F (175°C). Lightly grease a 9x13-inch baking dish with butter. Spread the peach filling evenly inside. Dot the top with one tablespoon of butter for extra richness.

Mix the Dry Ingredients

  • In another bowl, combine flour, baking powder, salt, and sugar. Stir everything together until well mixed. This helps the topping bake evenly and gives it a soft, fluffy texture.

Make the Batter

  • Pour melted butter, milk, and vanilla into the dry ingredients. Stir gently until just combined. Do not overmix the batter. A few small lumps are perfectly fine and help keep the topping tender.

Add the Topping

  • Spoon the batter evenly over the peaches. Do not stir it into the fruit. As it bakes, the topping rises beautifully while the peaches become sweet and juicy underneath.

Bake the Cobbler

  • Bake for about 45 minutes. The topping should turn golden brown. The peach filling should bubble around the edges. If needed, bake for five more minutes until fully cooked.
