Ingredients
  

  • 4 bone-in skin-on chicken thighs
  • Salt and freshly ground black pepper to taste
  • 1 tablespoon olive oil
  • 3 tablespoons unsalted butter
  • 6 cloves garlic minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • ½ cup chicken broth
  • Juice of 1 lemon
  • 2 tablespoons chopped fresh parsley for garnish

Instructions
 

  • Warm Up the Oven: Set your oven to a temperature of 400°F (200°C).
  • Season the Chicken: Generously season the chicken thighs with salt and pepper on both sides.
  • Sear the Chicken: Place the olive oil in a large skillet and heat it over medium-high heat. Add the chicken, skin-side down, and sear until the skin is golden and crispy, about 5-7 minutes. Turn the chicken over and allow it to cook for another 3-4 minutes.
  • Make the Garlic Butter Sauce: Remove the chicken and set aside. Lower the heat to medium in the same skillet.
  • Add the butter and minced garlic, cooking until the garlic is fragrant and slightly golden, about 1-2 minutes. Stir in the thyme, rosemary, and chicken broth. Bring to a simmer.
  • Bake: Return the chicken to the skillet, skin-side up, and spoon some of the sauce over the top. Transfer the skillet to the oven and bake for 25-30 minutes, or until the chicken reaches an internal temperature of 165°F (75°C).
  • Finish with Lemon: Remove the skillet from the oven. Squeeze lemon juice over the chicken and garnish with chopped parsley before serving.
