Ingredients

  • 8 oz fettuccine or spaghetti
  • 1 lb ribeye or sirloin steak sliced thin
  • 4 tbsp unsalted butter
  • 4 garlic cloves minced
  • ½ cup heavy cream
  • ½ cup grated Parmesan cheese
  • 2 tbsp olive oil
  • Salt and black pepper to taste
  • 1 tsp Italian seasoning
  • Fresh parsley chopped (for garnish)

Instructions

  • Cook pasta: Boil salted water in a medium pot. Add pasta and cook until al dente. Drain and set aside.
  • Season steak: Pat steak dry. Season with salt, pepper, and Italian seasoning.
  • Sear steak: Heat olive oil in a skillet over medium-high heat. Cook steak 2–3 minutes per side. Remove and set aside.
  • Make garlic butter sauce: In the same skillet, melt butter. Add garlic and sauté 1–2 minutes until fragrant.
  • Add cream: Stir in heavy cream. Let it simmer for 2–3 minutes.
  • Add cheese: Mix in Parmesan until smooth and creamy.
  • Combine pasta and steak: Add cooked pasta and steak to the skillet. Toss gently to coat.
  • Garnish and serve: Sprinkle parsley and extra Parmesan if desired. Serve immediately.

Notes

  1. Use room-temperature steak for even cooking.
  2. Don’t overcook pasta; it will finish in the sauce.
  3. Reserve some pasta water to loosen the sauce if needed.
  4. Slice steak against the grain for tenderness.
  5. Add a pinch of red pepper flakes for extra heat.
