Ingredients

  • 2 ribeye steaks about 1 inch thick
  • 2 tablespoons olive oil
  • Salt to taste
  • Black pepper to taste
  • 2 tablespoons butter
  • 3 garlic cloves crushed
  • 2 sprigs fresh thyme
  • 1 sprig rosemary

Instructions

Bring Steak to Room Temperature

  • Take the steak out of the fridge 20 minutes before cooking. This helps it cook evenly. Cold steak can become tough. Let it rest on the counter while you prepare everything else.

Season the Steak

  • Pat the steak dry with paper towels. This step is very important. Now add salt and black pepper on both sides. Press gently so seasoning sticks well to the meat.

Heat the Pan

  • Place your cast iron skillet on high heat. Let it get very hot. Add olive oil and wait until it starts to smoke slightly. This gives the steak a perfect crust.

Sear the Steak

  • Place the steak in the hot pan. Do not move it for 2 minutes. Let it form a golden crust. Flip the steak using tongs and cook the other side.

Add Butter and Herbs

  • Add butter, garlic, thyme, and rosemary to the pan. Tilt the pan slightly. Use a spoon to pour melted butter over the steak. This adds rich flavor.

Baste the Steak

  • Keep spooning the butter over the steak for 2–3 minutes. This helps cook the top gently. It also keeps the steak juicy and flavorful.

Check Doneness

  • Cook for about 4–5 minutes total for medium-rare. Press the steak gently to check firmness. You can also use a meat thermometer if needed.

Rest the Steak

  • Remove the steak from the pan. Place it on a plate. Let it rest for 5 minutes. This keeps the juices inside the meat.

Slice and Serve

  • Slice the steak against the grain. Serve hot with your favorite sides. Enjoy your homemade restaurant-style steak.

Notes

  • Always use a heavy cast iron pan for best results
  • Do not overcrowd the pan
  • Try different cuts like sirloin or filet mignon
  • Add chili flakes for a spicy twist
  • Use garlic butter for extra flavor
  • Let steak rest before cutting
  • Use high-quality meat for best taste
