Instructions
 

  • Toast English muffins until golden.
  • Pan fry ham until lightly crisped.
  • Keep muffins and ham warm.
  • Simmer water with a vinegar splash.
  • Crack eggs gently into water.
  • Poach eggs for three minutes.
  • Remove eggs using a slotted spoon.
  • Whisk egg yolks in a heatproof bowl.
  • Place bowl over simmering water.
  • Slowly whisk in melted butter.
  • Add lemon juice and seasoning.
  • Assemble muffins, ham, eggs, and sauce.
