Ingredients

  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 1 small shallot finely chopped
  • 2 cloves garlic minced
  • 1 cup Madeira wine
  • 2 cups beef stock
  • 1 teaspoon fresh thyme leaves
  • 1 bay leaf
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon tomato paste
  • Salt to taste
  • Black pepper to taste
  • 1 tablespoon cold butter for finishing

Instructions

Prepare the Aromatics

  • Heat olive oil and butter in a saucepan over medium heat. Add the chopped shallot and garlic. Cook gently for about three minutes. Stir often until they become soft and fragrant but not browned.

Add the Tomato Paste

  • Stir the tomato paste into the pan. Cook it for one minute. This simple step adds extra depth and richness. It also helps create a beautiful color in the finished sauce.

Pour in the Madeira Wine

  • Slowly add the Madeira wine. Stir well and scrape any bits from the bottom of the pan. Let the wine simmer gently. Reduce it by about half for stronger flavor.

Add the Stock and Herbs

  • Pour in the beef stock. Add thyme, bay leaf, and Worcestershire sauce. Stir everything together. Bring the mixture to a gentle simmer. The kitchen will start smelling amazing at this stage.

Reduce the Sauce

  • Allow the sauce to simmer for about twenty minutes. Stir occasionally. The liquid should reduce and become slightly thick. This reduction creates the rich taste that makes Madeira sauce special.

Strain for Smoothness

  • Remove the bay leaf. Pour the sauce through a fine mesh strainer. This creates a smooth texture. Return the strained sauce to the saucepan for the final step.

Finish with Butter

  • Add one tablespoon of cold butter. Whisk until fully melted. This makes the sauce glossy and silky. Taste and adjust with salt and pepper before serving.

Notes

  • Use homemade beef stock for better flavor.
  • Reduce the wine slowly for a richer sauce.
  • Add mushrooms for extra depth.
  • Try chicken stock for a lighter version.
  • Finish with a splash of cream for a creamy sauce.
  • Always strain for a restaurant-quality texture.
  • Fresh thyme tastes better than dried thyme.
  • Serve immediately for the best flavor.
