Ingredients
  

  • 2 pounds pork belly
  • 2 tablespoons olive oil
  • 2 teaspoons sea salt
  • 1 teaspoon black pepper
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 4 garlic cloves crushed
  • 1 onion sliced
  • 2 sprigs fresh rosemary
  • 2 sprigs fresh thyme
  • 1 cup chicken broth
  • 1 tablespoon apple cider vinegar

Instructions
 

Prepare the Pork Belly

  • Pat the pork belly dry using paper towels. Dry skin makes crispier crackling later. Score the skin carefully with a sharp knife. Do not cut into the meat deeply.

Season the Meat

  • Mix salt, pepper, paprika, and garlic powder in a small bowl. Rub the seasoning all over the pork belly. Make sure the salt gets into every skin cut.

Build the Flavor Base

  • Place sliced onions, rosemary, thyme, and crushed garlic into the roasting tray. Pour chicken broth around the vegetables. This keeps the pork moist during roasting.

Rest Before Cooking

  • Place the seasoned pork belly on top of the onions. Leave it uncovered for 15 minutes. This small step helps dry the skin even more.

Start Slow Roasting

  • Preheat the oven to 300°F. Roast the pork belly slowly for about 2 hours. Slow cooking makes the meat soft, juicy, and full of rich flavor.

Add Crispy Crackling

  • Increase the oven temperature to 450°F. Roast another 20 to 30 minutes. Watch carefully until the skin becomes golden, bubbly, and crispy.

Rest the Pork Belly

  • Remove the pork belly from the oven carefully. Let it rest for 10 minutes before slicing. Resting keeps the juices inside the meat beautifully.

Slice and Serve

  • Cut the pork belly into thick slices using a sharp knife. Serve hot with roasted vegetables, mashed potatoes, or fresh salad for a complete meal.
