Ingredients

For the Pork

  • 3 pounds pork loin
  • 2 tablespoons olive oil
  • 2 teaspoons sea salt
  • 1 teaspoon black pepper
  • 4 garlic cloves minced
  • 1 tablespoon fresh rosemary chopped
  • 1 tablespoon fresh thyme chopped

For Extra Flavor

  • 1 onion sliced
  • 1 carrot chopped
  • 1 celery stalk chopped
  • 1 cup chicken stock
  • 1 tablespoon butter

Instructions

Prepare the Pork

  • Remove the pork loin from the refrigerator about 30 minutes before cooking. Pat it dry using paper towels. Dry meat helps create a beautiful golden crust during roasting.

Make the Herb Seasoning

  • In a small bowl, mix olive oil, garlic, rosemary, thyme, salt, and pepper. Stir everything well. This mixture will give the pork amazing flavor and aroma.

Season the Pork

  • Rub the herb mixture all over the pork loin. Make sure every side is covered. Massage the seasoning gently into the meat for the best results.

Prepare the Vegetables

  • Place onion, carrot, and celery in the roasting pan. Spread them evenly. These vegetables add flavor to the meat and create a tasty base.

Place Pork in the Pan

  • Set the seasoned pork loin on top of the vegetables. Pour the chicken stock into the pan. This keeps the roasting environment moist and flavorful.

Roast the Pork

  • Preheat your oven to 375°F (190°C). Roast the pork for about 1 hour and 15 minutes. Cook until the internal temperature reaches 145°F (63°C).

Baste During Cooking

  • Halfway through roasting, spoon some pan juices over the pork. This keeps the surface moist and adds even more flavor to every bite.

Check for Doneness

  • Use a meat thermometer to check the temperature. This is the safest and easiest way to know when the pork is perfectly cooked.

Rest the Meat

  • Remove the pork from the oven. Cover it loosely with foil and let it rest for 15 minutes. This step keeps the meat juicy and tender.

Slice and Serve

  • Slice the pork into thick pieces. Serve with the roasted vegetables and pan juices. Enjoy every delicious bite with your favorite side dishes.

Notes

  • Use fresh herbs for better flavor.
  • Do not skip the resting time.
  • Add apples to the roasting pan for sweetness.
  • Use sage instead of thyme for a different taste.
  • Try honey glaze for a sweet finish.
  • Always use a meat thermometer.
  • Let the pork reach room temperature before cooking.
  • Save the pan juices for gravy.
