Ingredients
  

  • Large sea scallops – 12
  • Olive oil – 2 tablespoons
  • Unsalted butter – 2 tablespoons
  • Garlic cloves – 2 lightly crushed
  • Fresh thyme – 2 sprigs
  • Salt – 1 teaspoon
  • Black pepper – ½ teaspoon
  • Lemon juice – 1 tablespoon
  • Lemon wedges – for serving
  • Fresh parsley – 1 tablespoon chopped

Instructions
 

Prepare the Scallops

  • Wash scallops gently if needed. Pat them very dry with paper towels. Remove the small side muscle if attached. Sprinkle salt and black pepper on both sides. Dry scallops give the best golden crust and rich flavor.

Heat the Pan

  • Place a heavy skillet on medium-high heat. Let it get very hot. Add olive oil and swirl gently. The pan must be hot before scallops go in. This helps create a crisp outside quickly.

Place the Scallops

  • Carefully place scallops in the hot pan. Leave space between each one. Do not crowd them. Let them cook without touching for about two minutes. This builds that lovely deep golden color.

Add Butter and Flavor

  • Add butter, crushed garlic, and thyme sprigs into the pan. The butter will melt and smell amazing. Spoon the hot butter over each scallop gently. This makes them rich, glossy, and full of flavor.

Flip and Finish

  • Turn each scallop carefully with tongs. Cook the other side for one to two minutes. Spoon buttery sauce over them again. Add fresh lemon juice at the end for bright, fresh flavor and balance.

Plate and Serve

  • Move scallops to a warm plate. Spoon extra butter sauce over the top. Sprinkle chopped parsley. Add lemon wedges on the side. Serve right away while warm, soft, juicy, and delicious.
