Ingredients

  • 2 beef steaks sirloin or tenderloin, about 200g each
  • Salt to taste
  • Black pepper to taste
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 2 garlic cloves finely chopped
  • 1 small onion finely chopped
  • 100 g mushrooms sliced
  • 1 tablespoon Dijon mustard
  • 1 teaspoon Worcestershire sauce
  • 60 ml beef stock
  • 60 ml heavy cream
  • 1 tablespoon brandy optional
  • Fresh parsley chopped, for garnish

Instructions

Season the Steak

  • Take the steaks out of the fridge. Let them rest for 10 minutes. Season both sides with salt and black pepper. This helps bring out natural flavors. A good seasoning is key to a perfect steak.

Heat the Pan

  • Place a skillet on medium-high heat. Add olive oil and butter. Let the butter melt and foam slightly. This creates a rich base for cooking the steak properly.

Cook the Steak

  • Place the steaks in the hot pan. Cook for 2–3 minutes on each side. Use tongs to flip gently. Do not press the steak. Remove and let it rest on a plate.

Cook the Aromatics

  • In the same pan, add chopped onion and garlic. Stir gently for 2 minutes. Let them soften and release aroma. This builds a strong flavor base.

Add Mushrooms

  • Add sliced mushrooms to the pan. Cook until they turn golden brown. Stir often but gently. Mushrooms add deep, earthy flavor to the dish.

Deglaze the Pan

  • Add brandy carefully to the pan. Let it bubble and reduce slightly. This step adds rich depth. If you skip alcohol, use extra stock.

Make the Sauce

  • Add Dijon mustard and Worcestershire sauce. Pour in beef stock. Stir well and let it simmer for 2 minutes. This forms the base of the Steak Diane sauce.

Add Cream

  • Pour in the heavy cream slowly. Stir continuously. Let the sauce thicken slightly. It should be smooth and glossy, not too thick.

Return the Steak

  • Place the steaks back into the pan. Spoon sauce over them. Cook for 1–2 minutes more. This helps the steak absorb the flavors.

Garnish and Serve

  • Sprinkle fresh parsley on top. Serve hot with extra sauce. Your Gordon Ramsay Steak Diane Recipe is now ready to enjoy.

Notes

  • Use tenderloin for a softer texture
  • Do not overcook the steak
  • Add a splash of lemon for brightness
  • Use chicken stock if beef stock is not available
  • Try adding green peppercorns for extra flavor
  • Skip cream for a lighter version
