Ingredients
  

  • 400 g penne or fusilli pasta
  • 450 g ground turkey
  • 2 tablespoons olive oil
  • 3 garlic cloves minced
  • 1 small onion finely chopped
  • 1 teaspoon chili flakes
  • 1 teaspoon dried oregano
  • 400 g canned crushed tomatoes
  • 2 tablespoons tomato paste
  • ½ cup chicken stock
  • Salt to taste
  • Black pepper to taste
  • ½ cup grated Parmesan cheese
  • 2 tablespoons chopped fresh parsley
  • Fresh basil leaves for garnish

Instructions
 

  • Boil salted water in a pot.
  • Cook pasta until al dente.
  • Drain pasta and set aside.
  • Heat olive oil in skillet.
  • Add chopped onion and sauté.
  • Cook until soft and translucent.
  • Add garlic and chili flakes.
  • Stir for one minute only.
  • Add ground turkey to pan.
  • Break meat using spoon.
  • Cook until browned completely.
  • Stir in tomato paste.
  • Add crushed tomatoes and stock.
  • Sprinkle oregano, salt, and pepper.
  • Simmer for 10 minutes.
  • Add cooked pasta to sauce.
  • Toss until evenly coated.
  • Sprinkle Parmesan cheese generously.
  • Garnish with parsley and basil.
  • Serve hot and fresh.

Notes

  • Use freshly grated Parmesan always.
  • Do not overcook the pasta.
  • Let sauce simmer gently.
  • Taste and adjust seasoning.
  • Add spinach for extra nutrition.
  • Use whole wheat pasta optionally.
