  • 4 cups green cabbage finely shredded
  • 1 cup red cabbage finely shredded
  • 1 large carrot grated
  • 2 tablespoons red onion very finely sliced
  • 3 tablespoons mayonnaise
  • 2 tablespoons Greek yogurt
  • 1 tablespoon Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon lemon juice
  • 1 teaspoon honey
  • Salt to taste
  • Freshly ground black pepper to taste
  • 1 tablespoon chopped fresh parsley

Instructions
 

  • Wash all vegetables thoroughly.
  • Finely shred green and red cabbage.
  • Grate the carrot using a box grater.
  • Slice the red onion very thinly.
  • Place vegetables into a large bowl.
  • In a small bowl, add mayonnaise.
  • Add Greek yogurt and Dijon mustard.
  • Pour in vinegar and lemon juice.
  • Add honey, salt, and pepper.
  • Whisk dressing until smooth.
  • Pour dressing over vegetables.
  • Toss gently until fully coated.
  • Sprinkle fresh parsley on top.
  • Chill for at least 30 minutes.
  • Serve cold and enjoy fresh crunch.
