Ingredients
  

  • 4 bone-in pork chops about 1 inch thick
  • 2 tablespoons olive oil
  • 3 tablespoons butter
  • 3 garlic cloves crushed
  • 1 teaspoon sea salt
  • 1 teaspoon black pepper
  • 1 teaspoon smoked paprika
  • 1 teaspoon fresh thyme leaves
  • 1 teaspoon fresh rosemary chopped
  • 1 tablespoon lemon juice
  • 1 tablespoon chopped parsley for garnish

Instructions
 

Prepare the Pork Chops

  • Remove pork chops from the refrigerator. Let them sit at room temperature for ten minutes. Pat them dry with paper towels. Season both sides with salt, pepper, and smoked paprika.

Heat the Pan

  • Place a large skillet on medium-high heat. Add olive oil and let it heat until slightly shimmering. A hot pan is very important. It helps create a golden crust.

Sear the Pork Chops

  • Carefully place the pork chops in the hot pan. Do not move them for three to four minutes. This helps develop a beautiful brown crust.

Flip the Chops

  • Turn the pork chops using tongs. Cook the other side for about three minutes. The color should look rich and golden brown.

Add Butter and Garlic

  • Add butter, crushed garlic, thyme, and rosemary to the pan. The butter will melt quickly. Tilt the pan slightly so the butter gathers on one side.

Baste the Pork

  • Use a spoon to pour the melted butter over the pork chops again and again. This adds flavor and keeps the meat juicy while cooking.

Check the Temperature

  • Cook the pork until the inside temperature reaches about 145°F (63°C). If you do not have a thermometer, cook until the juices run clear.

Add Lemon Flavor

  • Drizzle fresh lemon juice over the pork chops. The lemon adds brightness and balances the rich butter flavor.

Rest the Meat

  • Remove the pork chops from the pan. Place them on a plate and let them rest five minutes. Resting allows juices to settle inside the meat.

Garnish and Serve
