Ingredients
  

  • 6 guajillo chiles dried and seeded
  • 2 cups water for boiling
  • 2 cloves garlic peeled
  • 1/2 medium onion chopped
  • 1 tomato chopped
  • 1 teaspoon cumin
  • 1/2 teaspoon salt adjust to taste
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 tablespoon apple cider vinegar

Instructions
 

  • Start by toasting the guajillo chiles in a dry skillet over medium heat for about 1 to 2 minutes per side, until they become fragrant.
  • Transfer the toasted chiles to a saucepan with water and bring to a boil. Remove from heat and let them soak for 20 minutes to soften.
  • Drain the chiles and place them in a blender. Add garlic, onion, tomato, cumin, salt, and pepper.
  • Blend until the mixture is smooth. If it's too thick, add a little water or vegetable stock to adjust the consistency.
  • Heat olive oil in a saucepan over medium heat. Pour the blended sauce into the pan and cook for 10 minutes, stirring occasionally.
  • Stir in the apple cider vinegar and cook for an additional 2 minutes.
  • Taste and adjust the seasoning if necessary.
