Ingredients
  

  • 2 cups all-purpose flour
  • 1/2 cup unsalted butter cold and cubed
  • 1/4 cup granulated sugar
  • 1/2 tsp salt
  • 1/4 cup ice water
  • 1 cup pineapple jam or finely chopped fresh pineapple
  • 1 egg beaten (for egg wash)
  • 2 tbsp demerara sugar optional, for sprinkling

Instructions
 

  • Make the Dough: In a large bowl, combine flour, sugar, and salt. Cut in the butter using a pastry blender or food processor until the mixture resembles coarse crumbs. Gradually add ice water and mix until a dough forms. Wrap in plastic and chill for 30 minutes.
  • Prepare the Filling: If using fresh pineapple, simmer the chopped pineapple with a bit of sugar until thickened. Let it cool.
  • Roll the Dough: On a floured surface, roll the dough to about 1/8 inch thickness. Cut into 4-inch squares.
  • Assemble the Guyanese Pine Tarts: Spoon a tablespoon of pineapple filling into the center of each square. Fold corners over the center slightly overlapping, to form a triangle. Seal edges with a fork.
  • Pre-bake Prep: Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper. Place Guyanese Pine Tarts on the baking sheet and brush with egg wash. Sprinkle it with demerara sugar if desired.
  • Bake: Bake for 20-25 minutes or until golden brown. Let the Guyanese Pine Tarts cool on a wire rack before serving.
