Ingredients
  

  • Beef chuck – 2 pounds cut into cubes
  • Coconut oil – 2 tablespoons
  • Onion – 2 large chopped
  • Garlic cloves – 5
  • Fresh ginger – 2 inches
  • Lemongrass stalks – 2 soft part only
  • Red chilies – 2
  • Ground turmeric – 1 teaspoon
  • Ground coriander – 2 teaspoons
  • Ground cumin – 1 teaspoon
  • Cinnamon stick – 1
  • Star anise – 2
  • Coconut milk – 2 cans
  • Beef stock – 1 cup
  • Brown sugar – 1 tablespoon
  • Tamarind paste – 1 tablespoon
  • Salt – 1 teaspoon
  • Black pepper – ½ teaspoon
  • Lime juice – 1 tablespoon
  • Toasted coconut flakes – 3 tablespoons
  • Fresh cilantro – for garnish

Instructions
 

Make the Spice Paste

  • Add onion, garlic, ginger, lemongrass, and chilies into a blender. Blend until smooth. This fresh paste builds deep flavor and makes the dish smell wonderful while cooking.

Brown the Beef

  • Heat oil in a large pot. Add beef pieces in small batches. Cook until brown on all sides. This step adds rich taste and keeps the meat juicy.

Cook the Spice Mix

  • Add the spice paste into the same pot. Stir well for three minutes. Then add turmeric, cumin, coriander, cinnamon, and star anise for warm flavor.

Add the Liquid

  • Pour in coconut milk and beef stock. Add brown sugar, tamarind paste, salt, and pepper. Stir everything gently until mixed well and smooth.

Slow Cook the Rendang

  • Return beef to the pot. Cover loosely and cook on low heat. Stir sometimes. Let it cook slowly until beef becomes tender and full of flavor.

Reduce the Sauce

  • Remove the lid for the final cooking time. Let the sauce thicken slowly. It becomes dark, rich, and coats every piece of beef beautifully.

Finish and Serve

  • Add lime juice and toasted coconut flakes. Stir gently. Top with fresh cilantro. Serve warm with fluffy rice for a comforting meal.
