Ingredients
  

  • 4 chicken thighs bone-in, skin-on
  • 2 tbsp olive oil
  • 1 onion chopped
  • 2 garlic cloves minced
  • 200 g mushrooms sliced
  • 1 red bell pepper sliced
  • 400 g canned chopped tomatoes
  • 120 ml chicken stock
  • 60 ml white wine optional
  • 1 tbsp tomato paste
  • 1 tsp dried thyme
  • 1 bay leaf
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions
 

Brown the Chicken

  • Heat olive oil in a large pan. Add chicken thighs, skin side down. Cook until golden brown. Turn and cook the other side. Remove and set aside.

Cook the Vegetables

  • In the same pan, add onion and garlic. Cook for two minutes. Add mushrooms and bell pepper. Stir gently until soft and slightly golden.

Build the Sauce

  • Add tomato paste and mix well. Pour in white wine and let it simmer. Then add chopped tomatoes and chicken stock. Stir everything together.

Add Herbs and Chicken

  • Add thyme, bay leaf, salt, and pepper. Place the chicken back into the pan. Make sure it is covered with sauce.

Simmer Slowly

  • Cover the pan with a lid. Let it cook on low heat for 30 minutes. Stir occasionally. The sauce will become thick and rich.

Finish and Serve

  • Remove the bay leaf. Taste and adjust seasoning. Sprinkle fresh parsley on top. Serve hot with rice or bread.

Notes

  • Use boneless chicken if you prefer faster cooking
  • Add olives for a Mediterranean twist
  • Replace white wine with extra stock if needed
  • Try fresh thyme instead of dried for better flavor
  • Add a pinch of sugar if tomatoes taste too acidic
