Ingredients

  • 500 g pork fillet sliced thin
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1 onion finely chopped
  • 2 garlic cloves minced
  • 200 g mushrooms sliced
  • 1 teaspoon paprika
  • 1 teaspoon Dijon mustard
  • 150 ml chicken stock
  • 150 ml sour cream
  • Salt to taste
  • Black pepper to taste
  • Fresh parsley chopped (for garnish)

Instructions

Prepare the Ingredients

  • Start by slicing the pork into thin strips. Chop the onion finely. Slice the mushrooms evenly. Keep everything ready before cooking. This makes the process smooth and quick. Good preparation saves time and helps you cook without stress.

Heat the Pan

  • Place a large frying pan on medium heat. Add olive oil and butter together. Let the butter melt slowly. This creates a rich base for cooking. Make sure the pan is hot but not smoking before adding ingredients.

Cook the Pork

  • Add the sliced pork to the pan. Cook for 4–5 minutes until lightly browned. Stir gently while cooking. Do not overcrowd the pan. Remove the pork and set it aside once cooked.

Cook Onion and Garlic

  • In the same pan, add chopped onion. Cook for 3–4 minutes until soft. Add garlic and cook for one more minute. The smell will become rich and tasty. This step builds the flavor base.

Add Mushrooms

  • Add sliced mushrooms to the pan. Cook them slowly until soft and slightly golden. This takes around 5–7 minutes. Mushrooms release water first, then become flavorful. Stir occasionally for even cooking.

Add Spices and Mustard

  • Sprinkle paprika over the mixture. Add Dijon mustard and mix well. These ingredients bring warmth and depth. Cook for one minute so the spices blend nicely with the vegetables.

Pour in Stock

  • Add chicken stock slowly. Stir well to combine everything. Let it simmer for 5 minutes. The sauce will start to thicken slightly. This step adds richness to the dish.

Return the Pork

  • Put the cooked pork back into the pan. Mix gently with the sauce. Let it cook for another 5 minutes. The pork absorbs all the flavors and becomes very tender.

Add Sour Cream

  • Lower the heat before adding sour cream. Stir gently until smooth and creamy. Do not boil after this step. This keeps the sauce silky and prevents curdling.

Garnish and Serve

  • Sprinkle fresh parsley on top. Serve hot with rice, pasta, or mashed potatoes. The creamy texture and rich flavor make it perfect for any meal.

Notes

  • Use chicken instead of pork for a lighter version
  • Add a splash of lemon juice for freshness
  • Try smoked paprika for deeper flavor
  • Use Greek yogurt instead of sour cream
  • Add spinach for extra nutrition
  • Serve with buttered noodles for a classic touch
