Ingredients

  • 2 cups chopped pecans
  • 4 tablespoons unsalted butter
  • 1 cup brown sugar
  • 1/2 cup heavy cream
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • Extra butter for greasing pan

Instructions

Toast the Pecans

  • Place chopped pecans in a dry skillet over medium heat. Stir often for about five minutes. The nuts should smell warm and nutty. Remove them quickly so they do not burn. Let them cool slightly before using.

Prepare the Baking Dish

  • Grease your baking dish lightly with butter. Line it with parchment paper for easier removal later. This step helps the fudge come out neatly without sticking or breaking apart.

Melt the Butter

  • Add butter to a medium saucepan. Heat slowly over medium-low heat. Let the butter melt fully and become smooth. Stir gently so it does not brown too much during cooking.

Add Brown Sugar and Cream

  • Pour in the brown sugar and heavy cream. Stir until everything blends together. Keep stirring for about four minutes. The mixture should look glossy and thick but not burnt.

Mix in Vanilla and Salt

  • Remove the saucepan from heat carefully. Stir in vanilla extract and salt. These small ingredients make a big flavor difference. The warm smell at this stage is absolutely amazing.

Add Powdered Sugar

  • Slowly add powdered sugar one cup at a time. Stir carefully after each addition. The mixture becomes thick quickly. Keep mixing until the fudge looks creamy and smooth without lumps.

Fold in the Pecans

  • Add the toasted pecans into the fudge mixture. Fold gently using a spatula. Make sure the pecans spread evenly so every bite has buttery nut flavor and crunch.

Spread into the Pan

  • Pour the fudge into the prepared baking dish. Use a spatula to spread it evenly. Smooth the top carefully. Work quickly because the fudge begins setting after a few minutes.

Cool Completely

  • Leave the fudge at room temperature for about one hour. Then place it in the refrigerator for another hour. This helps the texture become firm and easy to slice neatly.

Slice and Serve

  • Lift the fudge from the pan using parchment paper. Place it on a cutting board. Slice into small squares using a sharp knife. Serve and enjoy every creamy bite.

Notes

  1. Always toast your pecans first. Raw pecans taste softer and less flavorful.
  2. Use fresh powdered sugar for the smoothest texture. Old sugar can create lumps.
  3. Want extra sweetness? Add a handful of white chocolate chips.
  4. You can also sprinkle sea salt on top. Sweet and salty flavors taste wonderful together.
  5. Sometimes I add maple extract instead of vanilla. It gives warm fall flavors.
  6. Store the fudge in small layers with parchment paper between pieces. This keeps them neat and fresh.
