Ingredients
  

  • 2 pounds pork shoulder thinly sliced
  • 1 cup pineapple juice
  • ¾ cup brown sugar
  • 2 tablespoons soy sauce
  • 1 tablespoon salt
  • 1 teaspoon black pepper
  • 1 tablespoon garlic minced
  • 1 teaspoon paprika
  • ½ teaspoon red food coloring optional
  • 2 tablespoons vinegar
  • 2 tablespoons cooking oil
  • ½ cup water for cooking

Instructions
 

Slice the Pork Thinly

  • Cut the pork into thin slices. Thin meat absorbs flavor faster. It also cooks evenly and stays tender after frying. Try keeping the slices the same size.

Prepare the Marinade

  • In a large bowl, combine pineapple juice, brown sugar, soy sauce, garlic, vinegar, salt, paprika, and pepper. Mix very well until the sugar fully dissolves.

Add Optional Food Coloring

  • Add red food coloring if you want the classic tocino look. This step is optional. The flavor stays delicious even without the bright red color.

Marinate the Pork

  • Place the sliced pork into the marinade. Mix carefully until every piece is coated. Cover the bowl and refrigerate overnight for the best flavor.

Heat the Pan

  • Place a frying pan over medium heat. Add the marinated pork together with the marinade. Add half a cup of water to prevent burning early.

Cook the Pork Slowly

  • Let the pork simmer gently. Stir from time to time. The liquid will slowly reduce while the pork becomes soft and flavorful.

Let the Sugar Caramelize

  • Once the liquid dries up, add cooking oil. Continue cooking until the pork turns glossy and slightly caramelized. This gives tocino its sweet, sticky finish.

Serve While Hot

  • Serve the tocino hot with garlic rice and eggs. The sweet pork tastes amazing with warm rice during breakfast or even dinner.

  • Use pork belly for richer flavor and extra juicy meat.
  • Add more garlic for a stronger savory taste.
  • Do not cook on high heat. Sugar burns quickly.
  • Marinate for at least 8 hours for deeper flavor.
