  • 4 chicken thighs bone-in
  • 2 cups cooked sausage slices
  • 4 strips bacon chopped
  • 1 large onion diced
  • 2 carrots sliced
  • 3 garlic cloves minced
  • 1 cup crushed tomatoes
  • 2 cups chicken stock
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Salt to taste
  • Black pepper to taste
  • ½ cup fresh parsley chopped
  • 1 cup breadcrumbs
  • 2 tablespoons olive oil

Instructions
 

  • Preheat oven to 350°F.
  • Drain soaked beans thoroughly.
  • Cook beans until slightly tender.
  • Heat Dutch oven over medium heat.
  • Cook bacon until crisp.
  • Remove bacon and set aside.
  • Brown chicken thighs in bacon fat.
  • Remove chicken and keep aside.
  • Sauté onion, carrots, and garlic.
  • Add tomato paste and cook briefly.
  • Stir in tomatoes and chicken stock.
  • Add beans, sausage, bacon, and herbs.
  • Season with salt and pepper.
  • Nestle chicken into the mixture.
  • Cover and bake for 90 minutes.
  • Mix breadcrumbs with olive oil.
  • Sprinkle crumbs over the top.
  • Bake uncovered for 20 minutes.
  • Garnish with fresh parsley.
  • Serve warm and hearty.
