Preheat oven to 350°F.
Drain soaked beans thoroughly.
Cook beans until slightly tender.
Heat Dutch oven over medium heat.
Cook bacon until crisp.
Remove bacon and set aside.
Brown chicken thighs in bacon fat.
Remove chicken and keep aside.
Sauté onion, carrots, and garlic.
Add tomato paste and cook briefly.
Stir in tomatoes and chicken stock.
Add beans, sausage, bacon, and herbs.
Season with salt and pepper.
Nestle chicken into the mixture.
Cover and bake for 90 minutes.
Mix breadcrumbs with olive oil.
Sprinkle crumbs over the top.
Bake uncovered for 20 minutes.
Garnish with fresh parsley.
Serve warm and hearty.
