Place steak on a clean cutting board.
Whisk oil, vinegar, and mustard together.
Add garlic, herbs, salt, and pepper.
Pour marinade over the steak evenly.
Cover and refrigerate for two hours.
Preheat grill to high heat.
Remove steak and discard excess marinade.
Grill steak four minutes per side.
Cook until desired doneness.
Transfer steak to foil and rest.
Slice thinly against the grain.
Serve warm and fresh.
