  • ½ teaspoon black pepper
  • 2 cloves garlic minced
  • ¼ cup grated Parmesan cheese
  • 1 tablespoon fresh rosemary chopped
  • 1 tablespoon fresh parsley chopped

Instructions
 

  • Preheat oven to 425°F.
  • Boil potatoes until fork tender.
  • Drain potatoes completely.
  • Place potatoes on prepared baking sheet.
  • Smash gently using potato masher.
  • Drizzle olive oil evenly.
  • Sprinkle salt, pepper, and garlic.
  • Roast until edges turn golden.
  • Add Parmesan and herbs.
  • Roast five more minutes.
